Chocolate Chia Seed Pudding

This recipe is adapted from Minimalist Baker's version of Overnight Chocolate Chia Seed pudding. I pull so many ideas from Minimalist Baker, definitely check them out! 

4-ish servings

1/2 C Almonds

2 C Water

1/3 C Raw Unsweetened Cacao Powder 

1/3 C Chia Seeds

1/3 C Protein Powder*

1/3 C Maple Syrup or to taste

1/2 Tsp Vanilla 

1/2 Tsp Salt

1/2 Tsp Cinnamon


In a high speed blender toss in the almonds and 2 C of water. Blend on high for 2 minutes until it looks creamy. Add the rest of the ingredients and blend on high for until minute until combined and smooth. If it's runny, let it sit in the fridge for a few hours before eating. Top with cacao nibs, a crumbled cookie, granola or a spoonful of nut butter. Will keep in the fridge for about a week.
